Mashed potatoes with fried bacon and sauerkraut

Mashed potatoes and fried bacon are one of the simplest ways to use plain sauerkraut, and the one we recommend most often. The clean, sharp sauerkraut goes well with the soft mash and the salty bacon.

Makes 4 peopleTime 35 minutes

Ingredients

  • 1 kg floury potatoes
  • 50 g butter
  • 2 dl milk
  • Salt, pepper and a little nutmeg
  • 200 g bacon
  • 8 tbsp plain sauerkraut
  • Chives

Method

  1. Peel the potatoes, halve the large ones and boil them in lightly salted water until tender, 15 to 20 minutes.
  2. Drain and let the potatoes steam dry for a couple of minutes.
  3. Warm the milk. Mash the potatoes with butter and warm milk until smooth, and season with salt, pepper and nutmeg.
  4. Fry the bacon crisp in a dry frying pan.
  5. Serve the mash with bacon, a good spoonful of sauerkraut and a few snipped chives on top.

Tip

Fried sausages go well with it too, and then you have a whole dinner.
