Meat cakes in brown gravy with red cabbage and lingonberries

Meat cakes in brown gravy are Norwegian home cooking the way many remember it. Red cabbage with onion is our favourite, and it goes well with meat in brown gravy and lingonberries.

Makes 4 peopleTime 1 hour

Ingredients

Meat cakes

  • 500 g beef mince
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 2 tbsp potato starch
  • 2.5 dl milk
  • Butter for frying

Brown gravy

  • 3 tbsp butter
  • 3 tbsp plain flour
  • 5 dl beef stock
  • Salt and pepper

To serve

  • 800 g potatoes
  • 8 tbsp red cabbage with onion
  • Lingonberry jam

Method

  1. Mix the mince and salt well until the mixture turns sticky. Add the pepper, nutmeg, ginger and potato starch.
  2. Add the milk a little at a time, stirring well in between.
  3. Shape 12 meat cakes with wet hands. Brown them in butter in a frying pan, 2 to 3 minutes on each side, and set aside.
  4. Melt the butter for the gravy in a pan, stir in the flour and let it brown over medium heat while stirring until it is nut brown, 5 to 8 minutes.
  5. Add the stock a little at a time while stirring, and bring to the boil. Season with salt and pepper.
  6. Put the meat cakes in the gravy and simmer under a lid for 15 minutes. Boil the potatoes in the meantime.
  7. Serve with potatoes, a good spoonful of red cabbage with onion and a little lingonberry jam.

Tip

Stir the salt into the mince before adding the rest, so the meat cakes stay juicy and hold together.
