Smash tacos with cumin sauerkraut

Smash tacos are Friday tacos done a new way: the mince is pressed thin straight onto the tortilla and fried crisp in the pan. We use our cumin sauerkraut in tacos, and it suits the crisp meat well.

Makes 4 people, 8 tacosTime 30 minutes

Ingredients

Tacos

  • 400 g beef mince
  • 8 small flour tortillas
  • Salt and pepper
  • 100 g grated cheese, such as Norvegia or cheddar
  • ¼ iceberg lettuce, shredded
  • 8 tbsp sauerkraut with cumin
  • 1 lime in wedges

Lime cream

  • 1 dl sour cream
  • Juice of ½ lime
  • 1 pinch of salt

Method

  1. Stir the sour cream, lime juice and salt together for the lime cream.
  2. Divide the mince into 8 equal balls of about 50 g.
  3. Put a ball of mince in the middle of a tortilla and press it out flat with a spatula or the bottom of a pan, so the meat covers most of the tortilla. Season with salt and pepper.
  4. Heat a large frying pan, ideally cast iron, over medium-high heat. Put the tacos in meat side down and fry for 2 to 3 minutes, until the meat is crisp and cooked through.
  5. Turn the tacos so the tortilla is underneath, sprinkle cheese over the meat and let it melt for a minute.
  6. Add lettuce, lime cream and a spoonful of the cumin sauerkraut. Fold the taco and serve with lime wedges.

Tip

Fry only as many tacos at a time as fit flat in the pan. The meat needs to lie straight on the hot pan to turn crisp.
